12 Projects of Christmas!

Hi friends!

Gosh, I can't believe it's almost December!  Where has this year gone?  I'm excited, though--I LOVE Christmas!  The decorations, the baking, the music, getting together with family and friends, and of course I love to give gifts to those I love.  This year, with the economy being so tight, I've decided to go more of the homemade route for gifting, which got me thinking...

What can I do on my blog to promote all the goodies I"m going to be showcasing and tutorialing?

This year will be the first annual 
"12 Projects of Christmas"!



Between December 1 and December 24, I will feature 12 different projects that are Christmas/Winter-themed.  Some might be decorations for the house, some might be for gifts, and some might be for plain, ol' delicious Christmas cookies.  In theory, I'll post 1 project every other day, but let's be honest---there might be one day with 3 projects and a few days with none, but I'm going to be as consistent as possible.

I'm really excited!  A good friend of mine commissioned me to do a big project for her boyfriend's present, so that'll be a big project on here, plus I have a few more up my sleeves...so excited!

Hello October!

I know I say this all the time, so please forgive the redundancy, but I love Fall!

Today, I decorated the house for Fall...



...and started my morning with a Pumpkin Spice Latte from Sbux!
 

My friend Jessie is having a birthday get-together today with her husband and their families, and since it's Fall I wanted to make something yummy and perfect to take.  I have been craving everything pumpkin lately, and what better to take to a Fall party than pumpkin pie, especially when you're the fourth generation with a pumpkin pie family recipe (thank you Grammy!)?!  But pumpkin pie can be messy to eat, and one pie will only feed about 8 people (6 if you're like my family and want your slices big!) so I decided to make hand-pies.

If you don't know what a hand-pie is, it's a small, hand-held foldover pie that is about 2 or 3 bites big.  Perfect to eat at a party, not messy, and you can make a bunch of them out of one pie recipe.  Oh, and they are pretty dang delicious!


Here's what you need:
(this recipe will make about 40-45 handpies or one regular-sized pie)
1 cup pumpkin (either canned or fresh)
1 cup milk
1 cup sugar
2 eggs
1 tsp flour
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves

In my picture, you can see a can of pumpkin and then a cup of fresh pumpkin in the container with the purple lid.  My family has always made it with fresh pumpkin, but canned pumpkin works just as well.  Your choice!

Oh, and PS: I'm using my upcycled cookie sheet to message holder to hold my recipe card.  It's great, hands-free so your recipe card doesn't get all gross, and soooo easy to make!

Okay, so lets make some pies!
 First, mix the pumpkin, sugar, milk, and eggs in a mixing bowl until combined.
 Then add your flour, salt, and spices, and combine again.  If you're using fresh pumpkin, your mixture will be a little lumpy, and no matter what it's going to be soupy and runny--that's a good thing!

If you're making a regular-sized pie, pour it into a 9 inch pie crust.
If you're making mini handpies, pour into a baking dish (mine is 8 inches).

Bake at 350 degrees for 45-60 minutes.  While it's baking, I made my mini handpie crusts.  You have to bake the filling before you put it into the mini handpie crusts because it will be too liquidy if you don't.  That does not make for a very yummy (or clean) handpie.

So now it's crust time!  I used 4 9-inch premade pie crusts, which makes about 40 mini pie crusts, but only if you take the scraps, reroll them out, and continue cutting crusts until the scraps are too small to use.  I rolled out my dough onto a floured countertop and used a standard drinking glass to cut my rounds (a biscuit cutter would work just as well, but I don't have one lol) 
 Here are all my beautiful rounds!
 And here is my very yummy pie filling just out of the oven.  If you take it out and it's still liquidy in the middle, put it back in for about 7 minutes.  It will continue to finish firming up as it stands cooling, but you want it pretty firm when you take it out.  (Please ignore my dirty teapot and stove...)
 I put a little blob of filling onto each round (roughly 1/2 Tbs)...
 ...then folded it over and used a fork to pinch and seal the edges.  You might have a little pumpkin filling or liquid come out, and that's okay--just adjust how much you put in the next one so you don't waste too much squished out filling.  :)
 I used a paring knife to cut 2 small slits in the top of each pie, then brushed with melted butter and sprinkled with cinnamon-sugar before baking.  Then it's back into the oven for about 10 minutes at 350 degrees, until it's flaky and golden brown.
 Just out of the oven!
 And here they are, all finished, warm, and delicious. 

So now that my house is all decorated for Fall, smells like spices, and I have warm little pumpkin pie bites to fill my belly, I feel like Fall is truly here!  Happy October!

Reasons to Celebrate

Even though the reality of H officially joining the Army hasn't fully set in yet, I wanted to show him how much I support him, so I made him a celebration dinner: honey-balsamic cedar plank salmon, roasted crab legs, broccoli, and Summer Shady. So yummy! You can get the recipe and read about it here, on my Paleo blog. It turned out quite yummy, and it's definitely a recipe I'll make again!

There are lots of big changes coming our way starting next year, and it's crazy to think about what the future holds for us, right now I'm trying to stay focused on the present.

I got hired at a local preschool and elementary school to work as an after school care worker and substitute teach for them occasionally. I'm excited to be working with kids in such an amazing, supportive school, even if it's not as an English teacher. I'll be making enough to pay the bills right now, too, which is important. I'm just really happy to be back in a school working with kids again! :) H is working on finding a job right now, too--still turning in applications and waiting to hear back, so say a prayer! Selling Avon is also going well. I love getting to meet new people, to share these great products with my friends and family, and to make a little extra money (which I usually end up spending on products for myself...but that's okay, because it's basically like getting make-up for free!)

Wedding things are going well. We had some beautiful engagement photos taken by a girl that I work with, and we used them to make up some engagement announcements. We'll mail those out as soon as the engagement is official (gosh, I feel like we have to do everything backwards because of the Army, but we're making it work for our situation so I guess that's what's important!) My mom is going to pick up my wedding dresses today (yes, more than one--long story short, I got a dress for the JOP wedding and the dress for the traditional ceremony for super cheap at David's Bridal so my mom was amazing enough to get them both! I cried lol)and I've got invitation samples on the way, which is making me super excited! Yes, the traditional ceremony with friends and family isn't until late next year (probably Christmas time), but just playing around with wedding ideas is making me really excited and is giving me something to do. We are going home late next month because I need to get my dresses fitted and so we can get our marriage license--November 11 is coming so soon! Less than 3 months away now, and I'm getting all giddy and excited! :)

I'm just so thankful for all the blessings, even when things get rough and aren't going totally how you'd planned. God is good.

Got my first official teacher snowday today, so I spent it wrapping the last of the presents and making cookies (those pics will be posted in a bit). Now if only it could blizzards for just ONE more day...!

Domestic Goddess, or Martha Stewart Wannabe?

My first attempt at cooking a whole roast chicken:



I'm pretty sure I'm meant to be a stay-at-home mom at some point in my life. I love to be domestic and set up house; something about it makes me feel useful and happy. And while I usually cook big meals from scratch (or close to it), I have never actually tried to cook a whole chicken... my idea of cooking chicken is thawing out a frozen chicken breast and using that. I'm actually really grossed out by the idea of raw chicken (reminds me of a bad food poisoning incident a few years ago) and touching it gives me goosebumps.

So yesterday I bought a whole roasting chicken and decided to conquer my fears!! I found a great recipe for honey mustard chicken in a magazine where all you have to do is sauce the chicken and throw it in a crock pot for 4 1/2 hours. Easy enough, right? WRONG. I did not realize that "saucing the chicken" required me to stick my hand between the chicken's meat and the chicken's skin, and stick my hand in it's butt to marinade it! Gah! It was so gross and awkward, and I can't believe I actually made it through, but I now have a sauced chicken roasting in my crock pot! I'm so proud of myself! Let's hope that my first attempt at a roast whole chicken turns out well (I'm sure H will let me know lol) and that I have somehow overcome my fear of raw chicken-- or at least squelched it a little bit!

My domestic goddess training is coming along nicely, I think... now all I need is a sewing machine and I'll be on my way! (Martha Stewart would be so proud of me, hahaha!)

It cooked so long that it's literally falling apart and off the bone (so it doesn't look like a chicken...lol) and it tastes AMAZING! So proud of my first attempt at being a true domestic goddess!! :)
